Goat Milk Quality and Flavor

Awesome share by:
Great Goat  Information... SRN

Milk Quality and Flavor
As printed in the Tri-County Goat Newsletter, by Tom Shultz, editor. A publication of the University of California Cooperative Extension, Tulare County.

There are several factors that can affect both milk quality and flavor. Flavors in goat milk are often related to what the lactating doe eats. However, importance of corral and milking parlor hygiene, proper milking procedures and equipment maintenance, plus mastitis control and antibiotic residues, all can affect flavor and subsequent quality.
Percentages of off-flavors in milk generally are 80% feed related, 5% due to oxidation, 5% rancidity, 3% from chemical residues, 3% related to hygiene, and 4% from other causes. Some feed-related flavors are not  objectionable, while the others mentioned are usually offensive. Sometimes milk is said to have an off flavor because it is interrelated with an odd smell and/or texture.

To reduce feed flavors in milk, eliminate moldy feeds and offer suspected feeds either soon after milking or at least 4 to 5 hours before the next milking time. Objectionable flavors from some feeds pass from the rumen and digestive tract, via blood, into the udder and milk. Odors from feedstuffs are breathed by the doe and pass from the lung, via the bloodstream, to the udder and into milk. Controlling intake of questionable feeds is not always easy, and the amount of time between feeding and milking sometimes needs some experimentation. The following lists give examples of various feedstuffs for goats.

Little or No Feed Flavor With  Normal Amounts
Beet tops and pulp
Carrots and green peas
Corn, barley and oats
Soybeans and cottonseed
Potatoes and pumpkins
Safflower and sunflower
Citrus and coconut
Most grasses and hay

Off-Flavor If Fed Within 5 Hrs. of Next Milking
Alfalfa (green, hay or silage)
Soybeans or corn silage
Rye and rape
Turnips, cabbage, kale
Green barley
Sweet clover (green, hay or silage)

Common Weeds and Milk Off-Flavors
Wild garlic and onions Mustard, marigold, flax
Chamomile and fennel
Daisy, cress and yarrow
Snake, sneeze and rag
Pepper, bitter and worts
Cocklebur and buckthorn
Wild lettuce and carrot
Oxidized flavor is characterized by a metallic or cardboard carton taste sensation. It is most commonly caused by milk coming in contact with copper surfaces, or alloys containing copper, in the milk handling system. Consequently, stainless steel and glass are the materials of choice. Plastic and rubber are acceptable but harder to keep clean. Feed does not cause oxidized flavor, but a ration with a large proportion of alfalfa hay can predispose the milk to oxidation. Prolonged exposure of milk to light and ultraviolet rays may also result in oxidation.
Rancidity is characterized by a bitter, soap-like taste. To reduce potential rancidity, milk collection systems should have hermetically sealed joints. Otherwise, air injections can cause foaming that can lead to rancidity. Also, excessive "T" joints and elbows in the system can cause the problem. Increasing refrigeration capacity and/or the speed of cooling and maintaining cool temperature in the milk helps to reduce the problem. High bacteria numbers can aggravate the problem.

Chemical flavors in the milk often have a medicinal, sometimes "minty" taste. Prevention is best accomplished by following label instructions of disinfectants and cleaning agents used in sanitizing the milking system. This concerns both amount of sanitizer and duration of time it is used. Also, care is needed to properly clean and rinse equipment and to avoid chemical agent contact with milking equipment during the milking.
General hygiene in corrals, loafing barns, and the milking area can affect the flavor and quality of the milk.

This can occur through contact contamination of sediments on the udder, in milking equipment, and milk. Also, tests have shown that flavors can be transmitted from the environment to the udder within 15 minutes, by way of the respiratory tract. Goat inhaling of partially digested feed odors has also been reported as a possible cause of "goaty" milk flavor.

Another common cause of undesirable milk flavor is mastitis. This is mainly from the effect of mastitis on an increased salt and decreased sugar content in milk. Sometimes an insipid, flat, or watery taste can occur, or both salty and watery tastes can occur at the same time. Mastitis effects on milk flavor and the environmental hygiene situation have both been indicated as causes of "unclean" and/or "goaty" taste in milk.

Maintaining an appealing flavor in goat milk is a complex issue. An acceptable flavor to one consumer may not be acceptable to another. Likewise, some "off-flavors" are considered normal to persons that are used to a given smell and taste. The saying that dilution is the solution can only help to a limited point.  Causes of objectionable flavors are cause for alarm if there is an increasing group of unhappy consumers.

Off Grid Living: Propane Gas

This is a great read and very informative SRN

off-grid-living-with-propane
Living partially or totally off-grid-living presents its challenges. If you wish to maintain a standard of living in your home or retreat, and keep a comfort level not too far different from ordinary modern living, then one of your biggest decisions will be choosing what will be your fuel sources for energy. You will need to answer questions like, What will you cook with? How will you refrigerate? Light your home? How will you heat your home? What about energy for appliances, your water-well pump, computer, or everything else that normally ‘plugs in’?

There are many questions for sure, when you consider all of the modern conveniences that make our day-to-day lives easier. I believe that an approach of power diversification is the best one. Having multiple sources of energy will provide you a backup in some areas, and should one energy source be removed, at least you won’t lose ‘all’ of your living conditions.

One source of energy that could play a significant role in an off-grid-living environment is Propane gas. Unlike ‘natural gas’ which is often available in suburban homes from gas lines which are piped underground throughout the area, ‘propane gas’ is stored in stand-alone tanks sitting (or buried) right on your property. The gas is piped into the home and is drawn upon as necessary until the tank needs to be refilled. It’s refilled by a delivery truck, kind of like how an oil truck will deliver home heating oil for your furnace (if you have that type of heating system).

Propane is one of the cleanest burning fuels and burns with no soot and very few sulfur emissions. The gas evaporates quickly at normal temperatures and pressures and is usually supplied in pressurized steel gas cylinders. The most common tank (for typical portable home use) is a 20 pound tank (also sometimes referred to as a 5 gallon tank). This is the kind of portable tank you would find at a Home Depot, Lowes, etc.

Propane tanks also come in larger sizes, designed for more of a permanent installation, and can be installed large enough to keep you supplied for quite a long time. Generally, 500-gallon tanks easily accommodate an average four-bedroom home while 1,000+ gallon tanks can fuel very large homes. Propane can power most types of home appliances that we are accustomed to, so long as the appliance is designed for propane. Propane gas powered appliances include refrigerators, freezers, ranges, cooktops, outdoor grills, room heaters, central heating, water heaters, generators, clothes dryers, and more.

Propane gas is measured and distributed in gallons, pounds and cubic feet, and is usually sold by the pound when dispensed into portable tanks, and sold by the gallon when weighing the tank isn’t feasible.
Propane tanks are typically filled to 80% capacity to leave room for expansion.

1 Gallon of Propane = 27 kWh (Kilowatt Hours) of electricity.
1 Gallon of Propane = 91,600 Btu’s.
1 Gallon of Propane = 4.2 pounds as a liquid at 60-degrees F.
1 Gallon of Propane = 35.97 cubic feet.
1 Pound of Propane = 21,810 Btu’s.

“How long will my portable tank of propane last?” This is easy to figure out if you know the number of pounds of gas that is in your full tank and the BTU/hr demand of your burner or other gas appliances. One pound of liquid gas in your tank has 21,600 Btu/hr fuel value.

If you have a typical portable 20# tank, and if you have a typical low pressure burner gas grill, for example that is rated at 40,000 btu/hr maximum output, then you can run that burner at full blast for 10.9 hours:
(20# x 21,810 Btu/# = 436,000 Btu’s in the gas in a 20# tank)
(436,000 Btu ÷ 40,000 Btu/hr = 10.9 hrs)

For off-grid-living, or to be more self-sufficient without relying solely on an electric utility service for most of your energy needs, consider using propane gas and appliances. If you are planning or designing an off-grid-living location or retreat, consider propane as an alternative energy source. As an added benefit, propane gas energy will not ‘go out’ during a storm, etc. since it is located right there on your property. It is also EMP proof (provided your appliances don’t contain electronic circuits). As a side note, I would compliment this energy source with solar power (photovoltaic and direct solar energy design), because propane energy requires the services of that occasional fuel delivery…

How Long To Boil Drinking Water?

This is the kind of information
that can safe a life...SRN

April 18, 2012, Submitted by: Ken
how-long-to-boil-drinking-water
The U.S. Environmental Protection Agency reports that 90 percent of the world’s water is contaminated in some way. There are a variety of microscopic organisms that can contaminate water supplies and cause potentially serious, even fatal, illnesses among wilderness travelers. Dipping your head into a cold mountain stream and taking a long refreshing drink is an experience that has basically vanished from the wilderness areas of America. With the increased use of the wilderness there has also been an increase in the amount of bacteriological contamination of back country water supplies.

Biologically contaminated water is water that contains microorganisms such as Giardia (a common microorganism that, if not killed, leads to intestinal disorders), bacteria, or viruses that can lead to infections.

Toxic water sources contain chemical contamination from pesticide runoffs, mine tailings, and so on. Boiling, filtering, or chemically treating water can remove or kill microorganisms, but it will not remove chemical toxins.

Boiling is the most certain way of killing all microorganisms. According to the Wilderness Medical Society, water temperatures above 160° F (70° C) kill all pathogens within 30 minutes and above 185° F (85° C) within a few minutes. So in the time it takes for the water to reach the boiling point (212° F or 100° C) from 160° F (70° C), all pathogens will be killed, even at high altitude.

So the correct answer is… The moment your drinking water reaches a rolling boil, the water has already become safe to drink (except for the risk of chemical toxins).

Stop wasting fuel. You do not need to boil water for 5 minutes, 10 minutes, double for high altitude, whatever else you’ve heard, etc.

If you have a thermometer, you don’t even have to wait until the water begins to boil for safe drinking water.

Manipulated by Government!

Seems no matter how you look at it, we are always being Manipulated by Government! SRN

Written By:Low Tech Prep Security Consulting

Violence, assaults, and murder are on the rise in this country and around the world don’t let statistics fool you.

The x-factor in this topic in murder stats is the increase in medical technology over the past few years. With modern medical breakthroughs in treatments and medicine and overall knowledge many lives are saved that would in the past likely lead to death.
If you were to still be using 1970’s level technology and practices the death rate would rise 400%.
Aggravated assault statistics have been manipulated for political and job security related reasons. Domestic violence and hate crimes once fell into the aggravated assault statistic category but have recently been labeled into their own categories. This helps keep assault case statistics much lower than they really are.
In other cases police will downgrade to lesser charges in order to keep it from reflecting poorly on their departments overall performance. You ask why would they do this???
The first reason is most prison systems are already full to maximum capacity and if you’re going to add someone to an overpopulated system you must release another inmate. The most influential factor is politically motivated and involves the job security at the highest levels.
If crime and aggravated assaults are on the rise it reflects poorly on the Sheriff and Chief of Police. The Sheriff is a position that is voted on by the citizens of a city/town. If the statistics are on the rise the questions start to come up in the local community about overall job performance. With poor performance marks a Sheriff can easily be voted out of his position during the election process.
In short stat manipulation helps when it comes to voting. A side effect of this fudging of the numbers concerns police department budgets. Fudging of the numbers makes violence and crime look more under control which can result in cutbacks on the force budgets “funds, manpower and resources.”
With less staff and resources this can sometimes mean the force is spread to thinly. Slower response times are common. Less boots on the streets mean crimes that could otherwise be deterred are now taking place because of less police presence. Some crimes are never even recorded.
Many retired officers have admitted to stat manipulation for years. Now that they don’t have the threat of losing their jobs and benefits they are willing to expose this.

Got Water?

PARTS LIST BELOW. Got this idea from u-tuber Approtechie. He has a lot of good ideas. Use schedule 40 white PVC pipe. I don't have back up power here so this is my way of accessing my most convenient source of clean water if the power should go out for a long period of time. I used Teflon tape on any threaded joints. This cost about $70 to put together.
Parts List
Outer Pipe-One 11/4" plastic foot valve(Lowe's has them)
-One 11/4" adapter(slip x thread)
-As much 11/4" PVC pipe and couplings as needed
-One 11/4" x 1" Tee(slip)
-One 11/4" x 1" Bushing(slip)
-One 1" x 1/2" Bushing(slip) Trim the inside of this one.
Inner Pipe- One 3/4" Plastic foot valve
-One 3/4" Adapter(slip x thread) Trim the outside of this one.
-One 3" length of 3/4" pipe-sand one end to fit into 1"pipe
-About a 3ft. length of 1" pipe- this will be the piston
-One 1" x 1/2" Bushing(slip)
-As much 1/2" pipe and couplings as needed(1/4" holes drilled straight through pipe just above the piston)
-One 1/2"Tee(slip) + two short lengths of 1/2" with two 1/2"caps(slip) complete the handle.
THAT'S IT
I capped the handle off completely to trap air inside the upper portion of the 1/2" pipe because I didn't want to waste of energy lifting a lot of trapped water up and down. Also to force the water out the 11/4Tee. I was a little worried that the trapped air would make the inner pipe too buoyant so I did drill a hole in it about midway down. My well is pretty clean so I didn't put any kind of filter at the bottom. Some wells might need a finer screen than the one that comes with the foot valve( I think I've heard of people using sack cloth for this but not sure). For larger depths it might help to make the piston longer, maybe 5ft.
You tuber sameggers1: did a great video of his version!

We have a Socialist in the White House

Opinion of: Socialism Sucks

You decide, but you better look hard.
SEEK TRUTH!!! SRN

I never realized how deep this Socialist movement in our country has become. It never really hit me just how many Americans are actually supporting this change in our government.. This is no joke. This is really happening in our country.

We have Socialists in our congress, 80 of them ! We have a Socialist in the White House. We have admitted Socialists in our schools, colleges, news media, film industry. Our school books ignore the murders by Socialism/ Communism but will, at times, speak against American history, often degrading our very Founding Fathers, men who risked their lives to give us this great country.

Despite all the millions of people murdered in the name of Socialism/Communism our own citizens are declaring there faith in this bloody system and moving to have it replace our own government. This is totally insane.

I have posted , and will continue to post, many examples of the horrors that ALWAYS follow this system, but true history means nothing to these people. They act as if 180,000,000 deaths is a car accident that can be blamed on a flat tire. They say it will be different this time or that true Socialism has never existed!! Well , how many more tries is it gonna take ? How many more deaths? It’s not like people haven’t tried this before !! Bill Ayers say’s it will cost at least 25 million American lives to implement this garbage.
No!! Americans can NOT let this happen!! I truly believe that the more people that know the history of Socialism and Communism, the more that America will awaken.

It used to be common knowledge, well , not anymore! It’s up to us to spread the word. It’s up to us to change congress. It’s up to us to change the White House, school books, teachers, judges and demand that truth is represented in our news media. Until we do, this cancer will continue to spread.

The amazing thing is, most of these ,so called, Socialists know absolutely nothing about system they are supporting. You should read some of the completely clueless post I get on this page! The irony in the comments are crazy !! I saw a video of a woman at OWS that said she thought people in North Korea were better off, had more freedom and made more money than the people in South Korea ! I can’t make the stuff up, it’s nuts !!

There is No free speech, no personal innovation, no raises, no advancement, no incentive to be the best you can be because the government is running the show, “From each according to his ability, to each according to his needs.” Redistribution is everything !! Worst of all, there is no freedom. If OWS tried to march against a Socialist/ Communist regime, it would be jail, torture, “re-education” or death !
Look at history, where do you think all these deaths came from? ( from citizens that wouldn’t “conform”.)
We now have a Socialist President. Obama is a Socialist ! His cronies are attempting to radically change this country into some kind of Euro Socialist nightmare. Got Goat’s Milk?

Great share by: Stone Cottage Farm

Goat at Chaffin Family Orchard
http://nourishingourchildren.wordpress.com/2012/06/11/got-goat-milk/

Goats are among the earliest domesticated animals.

65%-72% of the world’s population drinks goat’s milk.  In many countries in the world, goat’s milk is preferred to cow’s milk.  Goats are naturally immune to diseases, such as tuberculosis, and are used in some countries to actually cure tuberculosis because of their inherent antibodies. India, Bangladesh and the Sudan are large producers. Even in the United States, the goat is gaining popularity. Goats eat less and occupy less grazing space than cows, and in some families the backyard goat supplies milk for family needs.
What does goat’s milk give you that cow’s milk doesn’t? Goat’s milk is believed to be more easily digestible and less allergenic than cow’s milk.
Goats at Chaffin Family Orchards
According to the Journal of American Medicine, “Goat’s milk is the most complete food known.” It contains vitamins, minerals, electrolytes, trace elements, enzymes, protein, and fatty acids that are utilized by your body with ease.  In fact, your body can digest goat’s milk in just 20 minutes.  It takes 2-3 hours to digest cow’s milk. It contains relatively high levels of tryptophan, calcium, Vitamin D, phosphorus, Vitamin B2, protein, and potassium.
Goat at Chaffin Family Orchards
Excerpt from “The Maker’s Diet” by Jordan S. Rubin. ’You shall have enough goats’ milk for your food, for the food of your household, and the nourishment of your maidservants’ (Proverbs 27:27).
The milk consumed in biblical times differed much from the milk we consume today. The milk of the Bible came from cows and goats and was consumed straight from the animal (it was not pasteurized or homogenized), or it was immediately fermented. These ‘live’ foods provide excellent health benefits in contrast to today’s pasteurized, homogenized, often skimmed and ‘refortified’ milk, which is not only less nutritious but also can be potentially harmful and a major cause of allergies and even heart disease. (pg 147)
Goats at Chaffin Family Orchards
Dr. Sears disassembles goat’s milk, nutrient-by-nutrient, to see how it compares with cow’s milk.

Different fat. Goat’s milk contains around ten grams of fat per eight ounces compared to 8 to 9 grams in whole cow’s milk, and it’s much easier to find lowfat and non-fat varieties of cow’s milk than it is to purchase lowfat goat’s milk. Unlike cow’s milk, goat’s milk does not contain agglutinin. As a result, the fat globules in goat’s milk do not cluster together, making them easier to digest. Like cow’s milk, goat’s milk is low in essential fatty acids, because goats also have EFA-destroying bacteria in their ruminant stomachs. Yet, goat milk is reported to contain more of the essential fatty acids linoleic and arachnodonic acids, in addition to a higher proportion of short-chain and medium-chain fatty acids. These are easier for intestinal enzymes to digest.

Different protein. Goat milk protein forms a softer curd (the term given to the protein clumps that are formed by the action of your stomach acid on the protein), which makes the protein more easily and rapidly digestible. Theoretically, this more rapid transit through the stomach could be an advantage to infants and children who regurgitate cow’s milk easily. Goat’s milk may also have advantages when it comes to allergies. Goat’s milk contains only trace amounts of an allergenic casein protein, alpha-S1, found in cow’s milk. Goat’s milk casein is more similar to human milk, yet cow’s milk and goat’s milk contain similar levels of the other allergenic protein, beta lactoglobulin. Scientific studies have not found a decreased incidence of allergy with goat’s milk, but here is another situation where mothers’ observations and scientific studies are at odds with one another. Some mothers are certain that their child tolerates goat’s milk better than cow’s milk, and mothers are more sensitive to children’s reactions than scientific studies.

Less lactose. Goat’s milk contains slightly lower levels of lactose (4.1 percent versus 4.7 percent in cow’s milk), which may be a small advantage in lactose-intolerant persons.

Different minerals. Although the mineral content of goat’s milk and cow’s milk is generally similar, goat’s milk contains 13 percent more calcium, 25 percent more vitamin B-6, 47 percent more vitamin A, 134 percent more potassium, and three times more niacin. It is also four times higher in copper. Goat’s milk also contains 27 percent more of the antioxidant selenium than cow’s milk. Cow’s milk contains five times as much vitamin B-12 as goat’s milk and ten times as much folic acid (12 mcg. in cow’s milk versus 1 mcg. for goat’s milk per eight ounces with an RDA of 75-100 mcg. for children). The fact that goat’s milk contains less than ten percent of the amount of folic acid contained in cow’s milk means that it must be supplemented with folic acid in order to be adequate as a formula or milk substitute for infants and toddlers, and popular brands of goat’s milk may advertise “supplemented with folic acid” on the carton.

The Communist Takeover Of America

We are watching this happen
 with our own eye's. SRN

 Shared by: https://www.facebook.com/pages/Socialism-Sucks/373757305985421

Profile pictureListed below, you are about to read 20 out of a list of 45 goals that the Communist Party declared that would be needed in order to instill a Socialistic /Communistic government in the USA. This list was established in 1963 as a long term commitment to the “Fundamental Transformation of America” without the catastrophic results of a nuclear exchange. See if they have achieved their goals or not.
You be the judge !
[From "The Naked Communist," by Cleon Skousen]

Communist Goals (1963) Congressional Record--Appendix, pp. A34-A35 January 10, 1963

11. Promote the U.N. as the only hope for mankind. If its charter is rewritten, demand that it be set up as a one-world government with its own independent armed forces.
15. Capture one or both of the political parties in the United States.
16. Use technical decisions of the courts to weaken basic American institutions by claiming their activities violate civil rights.
17. Get control of the schools. Use them as transmission belts for socialism and current Communist propaganda. Soften the curriculum. Get control of teachers' associations. Put the party line in textbooks.
18. Gain control of all student newspapers.
20. Infiltrate the press. Get control of book-review assignments, editorial writing, policy-making positions.
21. Gain control of key positions in radio, TV, and motion pictures.
24. Eliminate all laws governing obscenity by calling them "censorship" and a violation of free speech and free press.
25. Break down cultural standards of morality by promoting pornography and obscenity in books, magazines, motion pictures, radio, and TV.
26. Present homosexuality, degeneracy and promiscuity as "normal, natural, healthy."
27. Infiltrate the churches and replace revealed religion with "social" religion. Discredit the Bible and emphasize the need for intellectual maturity, which does not need a "religious crutch."
28. Eliminate prayer or any phase of religious expression in the schools on the ground that it violates the principle of "separation of church and state."
29. Discredit the American Constitution by calling it inadequate, old-fashioned, out of step with modern needs, a hindrance to cooperation between nations on a worldwide basis.
30. Discredit the American Founding Fathers. Present them as selfish aristocrats who had no concern for the "common man."
36. Infiltrate and gain control of more unions.
37. Infiltrate and gain control of big business.
40. Discredit the family as an institution. Encourage promiscuity and easy divorce.
41. Emphasize the need to raise children away from the negative influence of parents. Attribute prejudices, mental blocks and retarding of children to suppressive influence of parents.
42. Create the impression that violence and insurrection are legitimate aspects of the American tradition; that students and special-interest groups should rise up and use (united force) to solve economic, political or social problems.

I did not write these , the Communist party did. They are patient planners and then ruthless in its implementation.

Lenin declared that Communism would never be implemented straight up in the USA and that Communists should use protests of uninformed youth, or as he put it, "useful idiots", to promote a Socialist agenda which is the first, and necessary step ,toward there ultimate goal of Communism in America.

I'm not sure why, I just love this Picture

Food Fun/Ladybugs

 These are just to fun!
Great Idea for my next luncheon!
Sometimes you just need to have some fun...

Cherry tomatoes and black olives make really cute lady birds. Base is made up of sliced baguettes, cream cheese, smoked salmon and flat leafed parsley. (To help alleviate so many questions I would just like to add that in the UK, South Africa and Australia they are called Lady Birds - in the USA they are called Lady Bugs.)

The Black spots are chopped olives, the eye's are cream cheese applied with the end of a tooth pick and the antennas are the stem of the parsley. But remember be creative and make them your own, Just have fun and enjoy! SRN.

‘famine foods’

Learn about these wild edibles now,
 then when you need them
you'll know what to look for... SRN

The future of ‘famine foods,’

Unconventional edibles in the garden

Shepherd's purse is common and very nutritious
They’re called poor people’s foods. Plants foraged by starving folk and scavenged when crops succumb to drought: They’re what you eat just to get by. Many are unusually rich in nutrients, have medicinal value and may even taste good. But because they’re free for the taking they get little respect.
Scientists in fields such as ethnobotany study them and the ways they are eaten. But the true experts are indigenous people all over the world who’ve inherited them as part of their culture.

To the rest of us, who rely for our food on an alarmingly few species of plants grown on an industrial scale, these wild edibles are a gardener’s curiosity that may hold the key to a more sustainable way of feeding the world in the years to come.

A treasure house of knowledge about survival plants can be found on the Famine Foods Web site , sponsored by the horticulture department of Purdue University. Browsing through its database, you might be surprised to see a number of foods that are in your yard, such as the leaves of forsythia — eaten in China with oil and salt — or a garden narcissus that the French turn into flour. Will times ever be so bad that you’ll need to nibble the edible leaves of your expensive Japanese maple? Unlikely. But it’s useful to know that a pesky species like shepherd’s purse, a common weed, is a nutritional powerhouse, and that roots from the evil, tree-smothering kudzu vine, steamed and eaten, could someday save your life.

For the most part, though, these names are mysterious and surprising in their numbers. There are well over 1,000 listed, and many more could be discovered by searching beyond the world’s standard fare. It seems that all parts of a plant are tried — leaves, stems, root, seeds, bark — until someone who is as indomitable as the plant itself finds a way to consume it.

In one entry after another, these foods are made tastier by the addition of salt, oils, chile peppers and other condiments. At times they’re blended with staples such as common flours to stretch the supply. Some must be repeatedly soaked and drained, or boiled, to reduce bitterness.

Even more important are the tricks to reduce the toxicity that some foods possess, knowledge that’s in danger of being lost as these plants lose their habitats or fall further into obscurity. As the world’s population expands, we’ll need crops that grow when nothing else will.

Robert L. Freedman, who created and compiled the database and whose “Notes on the Famine Foods Website” gives a fine account of the subject, writes that there is no time to be lost in studying and rescuing both the plants and their lore. “Among these, known famine plant species may provide alternatives to costly Green Revolution approaches to providing staple crops for areas of the world in greatest need of food production self-sufficiency.”

And who knows which among them might someday be culinary darlings? I recall a native poverty food of ours, the eating of which was once so shameful that its remains were quickly buried. It was called the lobster.

Tip of the week
Provide a decorative and useful edge to the vegetable garden with a row of okra plants. Sow seeds now and thin after germination so plants are spaced 18 inches apart. Plants can grow as high as seven feet, depending on variety. Soak seeds overnight before planting to speed germination. Apart from local garden centers, a good source of okra seeds is Southern Exposure Seed Exchange (540-894-9480, www.southernexposure.com).

A new but old planting method

Another Great Share from SRN

 Iprepping

According to Iroquois legend, corn, beans, and squash are three inseparable sisters who only grow and thrive together. This tradition of inter planting corn, beans and squash in the same mounds, widespread among Native American farming societies, is a sophisticated, sustainable system that provided long-term soil fertility and a healthy diet to generations. Growing a Three Sisters garden is a wonderful way to feel more connected to the history of this land, regardless of our ancestry.
Corn, beans and squash were among the first important crops domesticated by ancient Meso-american societies. Corn was the primary crop, providing more calories or energy per acre than any other. According to Three Sisters legends corn must grow in community with other crops rather than on its own - it needs the beneficial company and aide of its companions.
Three sisters garden cornThe Iroquois believe corn, beans and squash are precious gifts from the Great Spirit, each watched over by one of three sisters spirits, called the De-o-ha-ko, or Our Sustainers". The planting season is marked by ceremonies to honor them, and a festival commemorates the first harvest of green corn on the cob. By retelling the stories and performing annual rituals, Native Americans passed down the knowledge of growing, using and preserving the Three Sisters through generations.
Corn provides a natural pole for bean vines to climb. Beans fix nitrogen on their roots, improving the overall fertility of the plot by providing nitrogen to the following years corn. Bean vines also help stabilize the corn plants, making them less vulnerable to blowing over in the wind. Shallow-rooted squash vines become a living mulch, shading emerging weeds and preventing soil moisture from evaporating, thereby improving the overall crops chances of survival in dry years. Spiny squash plants also help discourage predators from approaching the corn and beans. The large amount of crop residue from this planting combination can be incorporated back into the soil at the end of the season, to build up the organic matter and improve its structure.
three sisters garden squasghCorn, beans and squash also complement each other nutritionally. Corn provides carbohydrates, the dried beans are rich in protein, balancing the lack of necessary amino acids found in corn. Finally, squash yields both vitamins from the fruit and healthful, delicious oil from the seeds.
Native Americans kept this system in practice for centuries without the modern conceptual vocabulary we use today, i.e. soil nitrogen, vitamins, etc. They often look for signs in their environment that indicate the right soil temperature and weather for planting corn, i.e. when the Canada geese return or the dogwood leaves reach the size of a squirrels ear. You may wish to record such signs as you observe in your garden and neighborhood so that, depending on how well you judged the timing, you can watch for them again next season!

three sisters garden beansEarly European settlers would certainly never have survived without the gift of the Three Sisters from the Native Americans, the story behind our Thanksgiving celebration. Celebrating the importance of these gifts, not only to the Pilgrims but also to civilizations around the globe that readily adopted these New World crops, adds meaning to modern garden practices
Success with a Three Sisters garden involves careful attention to timing, seed spacing, and varieties. In many areas, if you simply plant all three in the same hole at the same time, the result will be a snarl of vines in which the corn gets overwhelmed!

Instructions for Planting Your Own Three Sisters Garden in a 10 x 10 square

When to plant:Sow seeds any time after spring night temperatures are in the 50 degree range, up through June.

What to plant:
Corn must be planted in several rows rather than one long row to ensure adequate pollination. Choose pole beans or runner beans and a squash or pumpkin variety with trailing vines, rather than a compact bush. At Renee's Garden, we have created our Three Sisters Garden Bonus Pack, which contains three inner packets of multicolored Indian Corn, Rattlesnake Beans to twine up the corn stalks and Sugar Pie Pumpkins to cover the ground.

Note: A 10 x 10 foot square of space for your Three Sisters garden is the minimum area needed to ensure good corn pollination. If you have a small garden, you can plant fewer mounds, but be aware that you may not get good full corn ears as a result.

How to plant:

Please refer to the diagrams below and to individual seed packets for additional growing information.

1. Choose a site in full sun (minimum 6-8 hours/day of direct sunlight throughout the growing season). Amend the soil with plenty of compost or aged manure, since corn is a heavy feeder and the nitrogen from your beans will not be available to the corn during the first year. With string, mark off three ten-foot rows, five feet apart.

2. In each row, make your corn/bean mounds. The center of each mound should be 5 feet apart from the center of the next. Each mound should be 18 across with flattened tops. The mounds should be staggered in adjacent rows. See Diagram #1
Note: The Iroquois and others planted the three sisters in raised mounds about 4 inches high, in order to improve drainage and soil warmth; to help conserve water, you can make a small crater at the top of your mounds so the water doesn’t drain off the plants quickly. Raised mounds were not built in dry, sandy areas where soil moisture conservation was a priority, for example in parts of the southwest. There, the three sisters were planted in beds with soil raised around the edges, so that water would collect in the beds (See reference 2 below for more information). In other words, adjust the design of your bed according to your climate and soil type.

3. Plant 4 corn seeds in each mound in a 6 in square. See Diagram #2

4. When the corn is 4 inches tall, its time to plant the beans and squash. First, weed the entire patch. Then plant 4 bean seeds in each corn mound. They should be 3 in apart from the corn plants, completing the square as shown in Diagram #3.

5. Build your squash mounds in each row between each corn/bean mound. Make them the same size as the corn/bean mounds. Plant 3 squash seeds, 4 in. apart in a triangle in the middle of each mound as shown in Diagram #4.

6. When the squash seedlings emerge, thin them to 2 plants per mound. You may have to weed the area several times until the squash take over and shade new weeds.
